My Mama's Meatloaf
I have had many compliments for this over the years and it was always a favorite (and a budget stretcher) while the kids were growing up.  Even a few people that vowed they "Did NOT like meatloaf" have LIKED this one.

It makes terrific sandwiches from the leftovers, too.

 

In a large mixing bowl soak 2/3 C. dry bread crumbs in 1 C. milk (1% is what I use) for a few minutes while you grate or finely chop 1/4 C. onion

 

ADD:  

 

3 LBS. ground beef (lean is good, but any will do)
1 tesp. salt
1/4 tesp. pepper
2 eggs (slightly beaten)
the 1/4 C. onion you chopped
1 tesp. ground sage

 

MIX THESE TOGETHER VERY WELL. (I find that the best tool for this is my hands)

 

Shape mixture into two loaves in an 11 X 13 X 2 inch pan.  Cover them with Piquant Sauce and bake uncovered for about 1 hour at 350 degrees.

FAT FIGHTING HINT:  remove the loaves to a platter as soon as they are out of the oven to keep them from soaking up the fat that is in the bottom of the pan.

 

Piquant Sauce:

In a 1 cup size glass measuring cup, mix the following together to spread on the meatloaves:

3 TBSP. brown sugar, 1/4 C.catsup, 1/4 tesp. ground nutmeg, 1 tesp. dry mustard
