A Recipe from the Abbott House to Yours.....

Here is a Recipe for a Hamburger that reminds me of one I had when I was a kid.  It is very loosely based on the recipe(which was secret) that was served at the VFW Eats Stand in my Grandparent's hometown of Stewartsville, MO during countless 4th of July Carnivals and Fall Festival celebrations.  I don't have the exact recipe, but have done a little experimenting and come up with a close approximation of what I remember that it tasted like.  It's not the same --- but is that because it's really not or because "nothing tastes as good as it did when you were a kid"?

I call it:

Mix together all the following:

1 and 1/2 lbs. hamburger, coarse grind 1 1/4 cups finely chopped Jonathan apple
1/4 cup fine bread crumbs 1 tesp. salt
1/2 tesp. ground sage 1/2 tesp. pepper
1/2 tesp. ground oregano 1/4 tesp. ground cinnamon
3/4 cup fine chopped yellow onion 1/4 tesp. ground nutmeg
1/4 cup applesauce 1 large raw egg

When ingredients have been thoroughly mixed, form into patties a little larger than the circumference of your hamburger buns to allow for shrinkage.  Fry in a non-stick skillet at medium low heat until no longer pink in middle.  If you like the outsides a little crispy and inside tender, start frying at a higher heat and then lower temperature to finish cooking.

The Original 4th of July Burgers were cooked in large quantity on a big portable grill table and that may be an option at your house but not at mine.  I use an electric skillet and drain most of the extra fat between batches.  However, I do spray the surface with a non-stick cooking spray, such as Pam, prior to frying the first ones.  It helps to keep them loose for turning.  Watch carefully to keep them from burning.   Try to cook through turning only once, if possible.

Serve on bun with burger fixin's on the side such as mustard and ketchup, mayo, sliced tomato, lettuce, and dill pickle and onion slices.  Let everyone fix theirs just the way they like best.  These take more time to fix than plain hamburgers but they may just become a family favorite.

Though I've never tried it, they probably could be cooked on an outdoor grill.   Let me know, if you try it and what success you had.  I'd really like to know.
