Banana Raisin Bread Pudding
| 1 cup
skim milk (I used 1/2% instead) 3 large eggs 3 bananas (3/4 lb), cut lengthwise and into 1/4" slices 1 TBSP. sugar (for topping) |

cup sugar 12 slices (12 oz total) cinnamon-raisin bread, cut into approximately 1/2" - 1" square chunks cooking spray

| Combine milk, 1/2 c. sugar and eggs in a large mixing bowl. Whisk this mixture well. Add bread and bananas. Toss gently to moisten. Cover and let stand for 10 minutes. Spoon into a shallow one and a half (1-1/2) quart baking dish sprayed with cooking spray. Sprinkle 1 TBSP. sugar over top. Bake for 25 minutes or until golden and set. | |

| 4 boneless, skinless chicken breasts (4 oz each) | 1 - 16 oz. jar Picante Sauce |
| Put chicken in crock
pot, pour picante over them. Cook on low all day or several hours. These may be served with cooked rice (extra points for rice: 1 cup rice = 5 pts. Serves 4 WW Points = 4 pts. per serving

it's now a favorite. It's very easy to do and much, much better for you than the
bought kinds are.
Chicken Fingers with Honey Mustard Dipping Sauce 1/2 cup crushed corn flakes Heat oven to 400°F. Spray a baking sheet with nonstick cooking spray. Crush corn flakes and combine with basil. Cut chicken into one-inch pieces; dip into egg whites and roll in crushed corn flakes. Place on baking sheet and bake, 10-12 minutes or until juices run clear. Combine mustard and honey for dipping. Makes 4 servings. Nutritional values per serving: 180 calories, 2 grams fat, 280 milligrams sodium, 13 grams carbohydrates, 22 grams protein. |
